Italian Dinner Bake

It feels like I haven't written a real post in such a long time, well probably because it has been a few weeks! *Easter Week*
I hope that everyone has decided their Easter menu and desserts! I always find it exciting to plan holiday meals. Easter Baskets?
I'm not sure about everyone else, but Easter Baskets have become a regular in my household. Even my husband gets one, yes I know he's spoiled! This year I tried to stray away from tons of candy and leaned more towards healthy snacks. I even broke down and bought my son an outdoor only gift. I hope to have pictures of it up soon!
*Dinner Tonight*
After digging through my pantry and fridge, I decided that my fresh mozzarella needed a good place to melt down. I pulled together a few chicken breasts and my homemade low sodium marinara, gluten free pasta and that fresh mozzarella! It was delicious.

Sorry for not having a final picture of my dish, it was too good to wait!
